In fact, if a lemon cake was the only dessert on the menu, this family of dessert-a-holics would take a pass (except Mom who loved lemon meringue pie). But over time, we have learned to appreciate the flavor of truly good lemon, in pies, squares, cakes or even in a glass of diet coke, ice tea, or vodka cranberry! Lemons have won the Sweet Time ladies over! We began making lemon squares years ago because others liked them. The buttery shortbread crust is actually a favorite of ours, without any topping!! But, lemon squares can be a bit challenging in the baking process. They need to stay in the oven just long enough to cook, but not too long so they remain moist and gooey but not chewy! When we first began making lemon squares, the lemony yellowness of the insides reminded us of uncooked yokes….so we would tend to over cook them, since we’re not fans of the yolk. Now perfected, Sweet Time Lemon Bars are one of our best sellers!! They are a beautiful addition on any sweet tray.
